Recipe: fennel and white bean soup
I made improvised soup yesterday while we were snowed in! I am going to have to make it again, because it came out really tasty. (Maybe next time I will experiment with adding milk to make it a cream soup.)
Chop small and brown in a soup pot:
one large onion
one bulb of fennel
several stalks of celery
Once brown, add:
white wine (1/3 to 1/2 cup)
1 can small white beans
1 can lentils
water
chicken-flavored soup mix
parsley
thyme
black pepper
Simmer until flavors are nicely blended, puree partially with immersion blender, simmer some more.
EAT. Alex added croutons and parmesan cheese to his bowl; I didn't.
